Singapore's National Dishes

Singapore's cuisine is a melting pot of Chinese, Malay, Indian, Peranakan, and Western influences. Here are the dishes you must try:

Hainanese Chicken Rice

The national dish: poached or roasted chicken on fragrant rice (cooked in chicken broth and pandan leaves), served with three sauces — chili flakes, ginger paste, and black soy sauce. Simple, perfect, addictive. 4–6 SGD all over the city.

Laksa

Katong Laksa is a spicy coconut curry soup with rice noodles, shrimp, fish cake, and tofu puffs — a flavor explosion of lemongrass, galangal, chili, and coconut milk. The Peranakan dish par excellence. Best place: 328 Katong Laksa (East Coast Road).

Char Kway Teow

Fried rice noodles with soy sauce, shrimp, Chinese sausage, sprouts, and egg — all prepared over an extremely high flame in a wok. The "Wok Hei" (breath of the wok) is the secret: the smoky, slightly charred taste that only an experienced hawker can achieve. Best at Hill Street Char Kway Teow.

Chili Crab

Singapore's most famous dish (besides Chicken Rice): Sri Lankan mud crabs in a sweet-spicy tomato-chili sauce, which you soak up with Mantou (fried dough buns). Not cheap (40–80 SGD per crab), but an experience. Top restaurants: Jumbo Seafood (Clarke Quay), Long Beach.

Satay

Marinated meat skewers (chicken, lamb, beef) grilled over charcoal and served with peanut sauce, onion slices, cucumber, and ketupat (rice cake). Best on Lau Pa Sat Satay Street (evenings from 7 PM, outdoors only). 0.70 SGD per skewer — order at least 10.

Kaya Toast

The Singaporean breakfast: crispy toasted bread with Kaya (coconut egg jam) and a piece of cold butter, accompanied by two soft-boiled eggs (sprinkled with soy sauce and white pepper) and a Kopi (coffee). All for 4 SGD at Ya Kun Kaya Toast — an institution since 1944.
