Dining on Safari

Surprise: The food on safari is often excellent! Most safari camps and lodges employ talented chefs who create impressive meals with simple means — from candlelit three-course dinners to bush lunches under an acacia tree.

  • Breakfast: Usually hearty — eggs, toast, fruit, porridge, pancakes. Often as a boxed breakfast for early game drives.
  • Lunch: Either at the lodge (buffet) or as a picnic lunch in the park (sandwiches, fruit, juice).
  • Dinner: The highlight. Three courses, often under the starry sky. Soup, main course (meat/fish with local sides), dessert.
  • Camping Cuisine: Even on budget camping safaris, the accompanying cooks are surprisingly good. Ugali, pilau, grilled meat, fresh vegetables.

Drinks

  • Safari Lager & Kilimanjaro Beer: The two most popular Tanzanian beers. Chilled after a dusty game drive: heavenly. 3,000–5,000 TZS.
  • Chai: Tanzanian spiced tea, strong, sweet, with milk and ginger. The national drink. Available everywhere for 500–1,000 TZS.
  • Konyagi: Tanzanian gin (clear, made from sugar cane). Neat or with tonic. The party drink of Tanzanians.
  • Fresh Juices: Mango, passion fruit, pineapple, sugar cane with ginger — at every street stall for 1,000–2,000 TZS.
  • Tanzanian Coffee: Tanzania produces excellent Arabica coffee (especially from the Kilimanjaro region). More good cafés are emerging in the cities.
  • Dawa: The famous East African cocktail — vodka, lime, honey. "Dawa" means "medicine" in Swahili. A sundowner classic at every safari lodge.

💡 Tipp

The "Sundowner" — a drink at sunset in the wilderness — is a staple safari ritual. Ask your guide for a special sundowner spot: on a hill overlooking the Serengeti, by the riverside with hippos, or at the crater rim of Ngorongoro. Unforgettable.
