Scottish Cuisine
Scottish cuisine is often underestimated — it is much more than fish & chips and haggis. Scotland has some of the best ingredients in Europe: wild-caught salmon, Aberdeen Angus beef, Highland lamb, seafood from the west coast, raspberries from Perthshire, and of course oats in all variations.
Must-Try
- Haggis: Scotland's national dish — a mix of sheep's offal (heart, liver, lungs), chopped onion, oatmeal, spices, and beef suet, traditionally cooked in a sheep's stomach. Sounds unusual? Tastes sensational — spicy, nutty, hearty, and surprisingly fine. Served with "neeps and tatties" (turnips and potatoes). Try it — you'll be surprised.
- Cullen Skink: A creamy smoked fish soup made from Finnan haddie (smoked haddock), potatoes, and cream. Scotland's answer to chowder — warming, rich, unforgettable. One of the best dishes for a cold Edinburgh day.
- Scotch Broth: Hearty vegetable soup with barley, lamb, and root vegetables. Comfort food for the soul.
- Fish & Chips: In Scotland, the chips are often fried in beef tallow (crispier!) and the fish is haddock instead of cod. "Salt 'n' sauce" (salt and brown sauce) instead of vinegar — that's the Edinburgh way.
- Full Scottish Breakfast: Like a Full English, but with haggis, tattie scones (potato scones), and Lorne sausage (square sausage). A breakfast that keeps you full until dinner.
- Cranachan: The Scottish national dessert — raspberries with cream, oats, and whisky. Simple, elegant, heavenly.
- Shortbread: The butteriest cookies in the world — flour, butter, sugar, nothing else. Walker's Shortbread is the classic, but the handmade varieties in Edinburgh's bakeries are even better.

- Mid-Range: Ondine (seafood), The Grain Store (Scottish-modern, Victoria Street), Howies (honest Scottish cuisine, multiple locations).
- Fine Dining: The Kitchin (Michelin star, Leith), Restaurant Martin Wishart (Michelin star, Leith), Number One at The Balmoral (Princes Street).
