Testaccio — The Cradle of Roman Cuisine

Testaccio is the culinary heart of Rome — the working-class district where the Cucina Romana was born. Next to the former slaughterhouse (Mattatoio, now a cultural center), workers developed the dishes that made Rome famous: Coda alla vaccinara (oxtail), Trippa alla romana (tripe), and the best supplì in the city. Testaccio is not a tourist district — this is where Romans eat, and you can tell by the quality and prices.

The Five Classic Pasta Dishes of Rome

In Testaccio, they were perfected, and here you should try them:

  • Cacio e Pepe: Pasta (Tonnarelli or Rigatoni) with Pecorino Romano and black pepper — three ingredients, a masterpiece. Technique is everything: The cheese must form a creamy sauce without clumping.
  • Carbonara: Guanciale (pork cheek, NOT bacon), egg yolk, Pecorino Romano, and pepper. No cream, never garlic, under no circumstances onions. In Testaccio, it's a religion.
  • Amatriciana: Guanciale, tomatoes, Pecorino, peperoncino. Originally from Amatrice (Lazio), adopted and perfected in Rome.
  • Gricia: Guanciale and Pecorino — the "original Carbonara" without egg, the "white Amatriciana" without tomato. The dish that started it all.
  • Coda alla vaccinara: Braised oxtail in tomato sauce with celery, pine nuts, and raisins — the dish of the slaughterhouse workers, who were paid with the "fifth quarter" (quinto quarto) of the animal: offal, tail, head.

Where to Eat in Testaccio

  • Da Felice a Testaccio: The legendary trattoria for Tonnarelli Cacio e Pepe — the waiter stirs the pasta at your table before your eyes. Reservation essential. Main courses: 12–18€.
  • Flavio al Velavevodetto: Built directly into Monte Testaccio (the ancient shard hill) — excellent Carbonara and Amatriciana in a unique setting. Main courses: 10–16€.
  • Mercato di Testaccio: The modernized market (2012) is Rome's best food market: Morchiaro for supplì, Donna Margherita for pizza, Cup Romano for trapizzino (stuffed pizza pockets). Main courses: 5–10€.
