Kottu Roti — the Sound Experience

Kottu Roti is Sri Lanka's loudest dish: Roti flatbread is rhythmically chopped and mixed with vegetables, eggs, spices, and optionally chicken or cheese on a hot plate with two metal blades. The clattering sound of the blades on the metal is the soundtrack of Sri Lanka—in the evenings, you hear it from every second restaurant.

Kottu Roti is fast food, Sri Lankan style: hearty, filling, affordable (500–900 LKR / 1.43–2.57 €), and available everywhere. The "Cheese Kottu" variant with melted cheese is equally popular with locals and tourists.
