The Cape Verdean Cuisine

The Cape Verdean cuisine is honest, hearty, and shaped by scarcity: On islands that struggled with droughts and poverty for centuries, people learned to make the most out of a few basic ingredients. The result is a Creole cuisine that combines African roots (corn, beans, cassava) with Portuguese heritage (fish, pork, spices).

National Dishes

  • Cachupa: THE national dish — a hearty stew made from corn (hominy), beans, cassava, sweet potatoes, and depending on the budget: pork, sausage (Linguiça), chicken, or fish. Every family has its own recipe, every island its variant. Cachupa Rica (with meat) is the festive version, Cachupa Pobre (only corn and beans) the everyday version. Often cooked the night before and reheated and fried the next morning as Cachupa Guisada — one of the best breakfasts in the world.
  • Atum Grelhado: Grilled tuna — fresh from the boat, grilled over charcoal, served with rice, beans, and manioc (cassava). On Sal and Boa Vista, an everyday dish of captivating simplicity and freshness. 5–10€.
  • Buzio: Sea snails stewed in a spicy broth of tomatoes, garlic, and Piri-Piri. A delicacy, especially on Santiago and São Vicente.
  • Caldo de Peixe: Fish soup — hearty, aromatic, with potatoes, banana, and vegetables. Every coastal restaurant has its version.
  • Pastel com Diablo: Fried pastries filled with spiced tuna. The perfect market snack. 0.50–1€ per piece.

Beverages

  • Grogue: Cape Verdean sugarcane schnapps (40–50% Vol.), distilled in traditional Trapiches. The best comes from Santo Antão. Drunk neat or as Ponche (with honey and lemon) — the Cape Verdean answer to Caipirinha.
  • Strela: The Cape Verdean beer — a light, fresh lager, brewed on Santiago. Ubiquitous and refreshing after a hot day. 1–2€.
  • Manecom Wine: Red wine from the volcanic crater of Fogo — mineral, strong, and unique. Also available as white wine.
  • Café: Strong, black, sweet — the Cape Verdean espresso is surprisingly good, especially when brewed from Fogo coffee. The coffee beans from Fogo grow on volcanic soil and have a unique aroma. 0.50–1€.

💡 Tipp

Ask for Cachupa Guisada for breakfast — the reheated, fried version of the previous evening's Cachupa is a flavorful experience and the most authentic Cape Verdean breakfast. Add a strong coffee, and you're ready for the day.
