For Beach Holidays & Sun
Fuerteventura (the best beaches), Gran Canaria South (infrastructure + beach) or Tenerife South (package + water parks). Lanzarote has fewer large beaches but wilder ones.
For Hikers
La Palma (the ultimate), La Gomera (cloud forest), Tenerife North (Anaga + Teide) or Gran Canaria Center (ravines). Fuerteventura is too flat for hiking.
For Surfers & Water Sports Enthusiasts
Fuerteventura (surfing mecca), Lanzarote (strong waves, reef breaks) or Gran Canaria (El Confital for bodyboarding).

Rule of thumb: The eastern islands (Lanzarote, Fuerteventura) are drier and windier. The western ones (La Palma, La Gomera, El Hierro) are greener and wetter. Tenerife and Gran Canaria have both — north wet, south dry.
