The Bánh Mì is the most brilliant culinary culture clash: A crispy French baguette (a legacy of colonial times), filled with an explosion of Vietnamese flavors — pork, pâté, pickled vegetables (Đồ Chua: carrots and radish), fresh cilantro, cucumber, chili, soy sauce. Prepared fresh in 30 seconds, eaten by hand, for a ridiculous 15,000–30,000 VND (0.55–1.10 €).

The baguette is the key: Vietnamese baguette is lighter and airier than the French original — crispy on the outside, almost hollow inside. With the addition of rice flour, it has a different texture. Every stall has its secret recipe for the filling.
