New Nordic Cuisine
Norway's gastro scene has experienced a revolution in recent years. Inspired by the Danish New Nordic movement (Noma), but with its own character, Norwegian chefs focus on local ingredients, traditional preservation methods, and Scandinavian purism:
- Maaemo (Oslo): Norway's only 3-star restaurant (Michelin). Esben Holmboe Bang creates a menu using exclusively Nordic ingredients. 12 courses, 4,500 NOK (390 €). An experience.
- Lysverket (Bergen): Christopher Haatuft combines Western Norwegian seafood with international influences. Located in the KODE art museum.
- Credo (Trondheim): Heidi Bjerkan runs her own farm for the restaurant — 100% local, 100% seasonal. One Michelin star.
- Statholdergaarden (Oslo): Classic Norwegian cuisine at the highest level, in the city's oldest inn.
- Under (Lindesnes): The underwater restaurant — architecture and culinary art merge below sea level.
The New Nordic Cuisine has also influenced everyday cooking: Mathallen (food courts) in Oslo, Bergen, and Stavanger offer upscale street food, local producers, and craft beers. Even in small fjord villages, there are now surprisingly good restaurants.
