The Tyrolean cuisine is Alpine cuisine in its purest form: hearty, filling, and perfect for hungry hikers and skiers. Here, dumplings, bacon, cheese, and game dominate — simple ingredients, masterfully prepared. The most important dishes you must try:

The Classics

Tyrolean Gröstl — The national dish: fried potatoes with beef (or pork), onions, caraway, and a fried egg on top. Available at every hut and inn. €10–15.

Kasspatzln (cheese spaetzle) — Hand-scraped spaetzle with melted mountain cheese and fried onions. Sinfully good, sinfully high in calories. €10–14.

Schlutzkrapfen — Tyrolean dumplings with spinach-ricotta filling, served with brown butter and Parmesan. The Tyrolean answer to ravioli. €12–16.

Dumplings — In all variants: bacon dumplings in soup (€6–8), spinach dumplings with Parmesan (€10–13), cheese dumplings with salad (€10–14). They are not to be missed at any alpine hut.

Kaiserschmarrn — The fluffy, torn pancake with raisins and plum compote is the most popular dish at every hut. Can pass as a main course. €9–14.

Bacon & Cheese

Tyrolean bacon is protected designation of origin (PDO): smoked, air-dried ham with juniper aroma, matured for at least 22 weeks. Served at every snack station as a Brettljause — a wooden platter with bacon, mountain cheese, smoked sausages, pickles, and fresh farmhouse bread. €12–18 for a platter for two.

The Tyrolean grey cheese is a specialty you have to like: low-fat sour milk cheese with an intense flavor and crumbly texture. Traditionally served with vinegar, oil, and onions as "grey cheese with Gschwollene" (with boiled potatoes).

Drinks

Schnapps is as much a part of Tyrol as schnitzel is to Vienna: over 4,000 small distilleries produce fruit brandy, pine schnapps, Williams, and gentian. A shot (2 cl) at the hut: €3–5. Visiting a show distillery (e.g., Erlebnissennerei Zillertal) is worthwhile.

Beer: Starkenberger (Tarrenz), Zillertal Beer, and Bierol (craft brewery from Schwoich) are the local brands. At the hut, a half-liter costs €4.50–6.

💡 Tipp

The best "Brettljause" is not found in the valley, but on an alpine pasture after an hour's ascent. Real insider tips: the Alfenhütte (Sellrain Valley), the Gallhof-Alm (Stubai Valley), and the Hallerangeralm (Karwendel). On the alpine pastures, the bacon is often still smoked on-site — the taste difference to supermarket bacon is enormous.
